Hallomi with Pesto Sandwich

Ingredients
2 cups fresh basil leaves (about 1 large bunch)
3 cloves garlic.
1/2 cup pine nuts (or walnuts)
3/4 cup freshly grated Parmesan Cheese
1/2 cup olive oil.
Salt and Pepper

Method
1. To make the Pesto Sauce:
combine basil, garlic, pine nuts and Parmesan in the bowl of a food processor; season with salt and pepper, to taste.
While the processor is operating, add olive oil in a slow stream until all ingredients are well mixed.
2. Using the toaster or grill, toast the bread and then the hallomi cheese
3. On the bread, add a layer of the pesto sauce then add the hallomi cheese.
You add any vegetables you like (tomatoes, rocca, cucumber …etc)
4. Add another layer of pesto sauce and then put the second piece of bread
